Question:
We installed the 56217 wiring harness to our 2015 Highlander-the fuse for the highlander marked towinch would not take the 10amp fuse provided-it would only take the 7.5 amp extra fuse that was in the lid of the box on the Highlanderdid we do something wrong? Everything works-just worried we will blow the fuse.

The Curt T-Connector Vehicle Wiring Harness # C56217 that you referenced is indeed a correct fit for your 2015 Toyota Highlander.
Please note that the 10-amp ATC fuse included in the kit is not intended for installation in the vehicle's fuse panel; this fuse is to be installed in the included red fuse holder that is wired to the converter box.
I don't think you need to worry too much about blowing the fuse. This particular harness has a substantial output current capacity - 3 amps per stop/turn circuit and 6-amps for the taillight circuit - which is more than many similar products. Unless your trailer uses a very large number of standard incandescent lights its power draw should be well within the harness output capability.
If you do find that you are routinely blowing the fuse one remedy is to reduce the trailer's power demand by replacing some or all of its lights with high-efficiency LED types. LEDs typically draw only 1/10th of the power of incandescent lights and so they will provide an easy fix if you have issues with the 10-amp fuse.
For reference I have included a link to our main page for LED-type trailer lighting. Filters in the left-hand margin will allow you to narrow the products shown based on style, shape, color and mounting method. You can even search for specific sizes of lights in the same manner.
