The first thing you are going to want to do is consult the truck owners manual for specific information on flat towing it. There are different configurations of the 2003 GMC Sierra 1500 and would require different base plates.
If you have a Z71 model and the front suspension uses a torsion bar use # 199-6 or # 199-5.
If you have an HD model (torsion or coil springs) use # 3115-1 or # 3115-3.
If you do not have a Z71 or HD and have coil springs in the front use # 199-10 or # 199-11.
Any of the above base plates can be used with the Roadmaster Falcon 5250 tow bar. The tow bar is rated for 5,000 pounds so make sure that the truck weighs under that or you will not be able to use that tow bar. You will also need safety cables, # RM-653, rated for 10,000 pounds.
For lighting I recommend a simple magnetic kit, # RM-2120. With a magnetic kit you will not have to cut into the vehicle wiring for installation.
For a braking system I recommend the Roadmaster InvisiBrake, # RM-8700. Once the initial installation and set up is complete you will not have to mess with the system again like you would with portable systems. If using this braking system with the magnetic light kit, you will need to cut off the white wire from the 4-Way connector, light side, and ground the lights to the truck frame or negative battery terminal.
I have included a couple of helpful links to the right on flat towing for you.
