trying to find a wiring setup for a trailer on a 2016 mini cooper clubman - challenge is that it has ambulance doors and the lights are in the doors, rather than the body of the car - and those swing open. Is there a product which will work ?

The ZCI Circuit Protected Vehicle Wiring Harness w/ 4-Pole Flat Trailer Connector and Installation Kit # 119250KIT will allow you to wire in the 4-way flat connector on your 2016 Mini Cooper Clubman. With having the tail lights in the door you will need to remove the panels on the interior where the wiring from the doors enters the vehicle. You can then use the included tester to identify the correct wiring for the tail light, brake light and turn signal for the driver's side and the turn signal on the passenger side.
