How difficult is it to raise and lower the height of the bars. I would like to have the bars lower when just carrying my bikes and need it high to carry my kayak.

As far as adjusting the height of the Yakima OverHaul HD Adjustable Truck Bed Ladder Rack, it requires you to use the included allen wrench set to loosen 2 bolts on each support. Once you have the rack at the desired height, you simply tighten the bolts to secure the bars in place. I went ahead and attached a video that walks you through this process at timestamp 7:58. For your 2021 Ram 1500, the correct model you need is the # Y01151-58 (without Rambox).

However, if you are looking for a faster/easier adjustable ladder rack, I recommend the Thule Xsporter Pro Truck Bed Ladder Rack - Aluminum - 450 lbs # TH500XTB. The Xsporter comes with turning knobs that you use to loosen/tighten the rack instead of using an allen wrench. I attached a video of the Xsporter that shows you just how easy it is starting at timestamp :20. This model of Xsporter fits 2021 Ram 1500 models with 5-1/2 foot or 6-1/2 foot beds without Rambox.
