There are a few differences to consider between the Draw-Tite - 2" # 76271 and the EcoHitch - 2" # 306-X7391 for your 2021 Subaru Forester. The first thing to keep in mind is the installation difficulty. The installation of the Draw-Tite hitch is considerably easier than the EcoHitch. This is due to the fact that the EcoHitch requires the removal of more components because the crossbeam of the EcoHitch takes the place of your bumper's impact bar. This makes the design of the EcoHitch more hidden. As far as a rough time estimate, the installation of the Draw-Tite is about an hour and the installation of the EcoHitch is about 2 hours.
Apart from the installation process, the designs are different. The EcoHitch offers a completely hidden design while the crosstube on the Draw-Tite hitch is completely visible. This gives an aesthetic advantage to the EcoHitch.
Another thing to consider ground clearance and how close the hitch installs to the bumper. These measurements are important when wanting to transport accessories on the hitch. For the Draw-Tite, you will have 12-1/2 inches of ground clearance and a length of 5-1/2 inches from the center of the pinhole to the outside face of your rear bumper. For the EcoHitch, you will have a ground clearance of 13 inches and measures only 3 inches from the center of the pinhole to the outside face of the rear bumper.
With all things considered, I recommend the Draw-Tite because it is a more economical hitch that will get the job done with the same tongue weight capacity (525 pounds) and towing weight capacity (3,500 pounds) as the EcoHitch. Most accessories have a longer shank than 5-1/2 inches, so that will eliminate any concern about bumper clearance. For example, if you are looking to attach a cargo carrier, the 24x60 etrailer Cargo Carrier for 2" Hitches # e98874 has a measurement of 9-1/2 inches from the shank's pinhole to the closest part of the carrier when folded up.
