Will Trailer Hitch from 2017 Ford Edge Fit 2021 Model

Is there any class 3 hitch for a 2017 Ford Edge SEL that will fit with a 2021-2022 Ford Edge SEL?

The 2017 and 2021 Ford Edge are of the same generation, so the hitch fits for both vehicles would be the same. The Curt # C13234 Class III hitch you'd looked at will fit both vehicles.
The hitch manufacturers don't list fits for the 2022 model Edge as of yet, but from what I've found online there aren't any appreciable changes to the 2022 model that would have any effect on the hitch fits, so they should carry over to the 2022 model as well.
If you'll be towing with the hitch, you'll also need a trailer wiring harness like # 118677 for Sport and Titanium models or # 118669 for SE or SEL models. For a ball mount use # D-28 along with a # PC3 hitch pin. For a trailer ball use # 19260 for a 1-7/8 inch ball or # 63845 for a 2 inch ball.
