The install kit you need to complete your installation for your 2011 Dodge Ram 3500 long bed is either the Curt part # C16420-104 which has a gloss finish or Curt part # C16420-204 which has a carbide finish.
The Curt E5 5th Wheel Trailer Hitch w/ R16 Roller - Slide Bar Jaw, part # 16516, that you reference is basically designed for a short bed, however, you can use it on your long bed, but, it is very unlikely that you will need to use the sliding feature of the hitch to make 90 degree turns safely. It can remain in the tow position (not slid back) and you should have enough clearance with an 8 foot bed truck. A slider should only be slid back when making tight maneuvers and not for general traveling.
We have several stationary hitches with the pivot feature which are fit for your 2011 Dodge Ram 3500 long bed. One choice is the Curt part# C16115, which has a double pivot head. This unit is rated for 16,000 pounds gross trailer weight and 4000 pounds pin weight.
If you need a hitch with a higher capacity, Curt part# C16130 has a 20,000 pound gross trailer weight and 4000 pound pin weight.
