Recommended Air Helper Spring Kit For 2020 GMC Sierra 2500

What’s the best option for a air bag system for my truck? Is there a ride difference between the 5k and 7.5k bags when not hauling a load?

For your 2020 GMC Sierra 2500 I recommend the Firestone Ride-Rite Air Helper Springs - Double Convoluted - Rear Axle # F2613 which has a 5000lb load leveling capacity to level your truck when you are towing a trailer or carrying a heavy payload.
The vast majority of trucks are not towing a trailer with a tongue weight or pin weight above 5000lbs as most trucks are not rated to carry that much weight. The 7500lb rated system, the # F2709, will not have a different unloaded ride.
I recommend stick with the # F2590 as it is more cost effective, and will offer plenty of support for whatever you are needing to tow or carry.
To keep from having to manually air up the helper springs each time you are ready to tow a trailer or carry a heavy payload I recommend adding an on-board air compressor like the Firestone Air Command II - Analog Gauge w/ Heavy Duty Compressor - Dual Function - 150 psi # F2219 which will allow you to adjust the air pressure in each air bag separately from the comfort of your driver seat.
