The Firestone Ride-Rite Red Label Extreme Duty Air Helper Springs - Rear Axle # F2701 you were looking at are confirmed to fit your 2005 Ram 3500 2WD Dual Rear Wheel and will offer up to 7500lbs of load leveling support to your rear suspension when towing a trailer or carrying a heavy payload.
To keep from needing to manual inflate the air helper springs before use I recommend adding an onboard air compressor like the Air Lift Load Controller II Compressor System for Air Helper Springs - Single Path # AL25592 which will allow you to control the pressure in the helper springs from the comfort of your driver seat.
Since the # F2701 does not interfere with the rear shocks on your truck, you will have no issues going with the Bilstein 5100 shocks you mentioned, though we do not sell them so you will need to find them from another vendor.
