I recommend the Furrion Over the Range RV Convection Microwave # FMCM15SS you were looking at as it is a top of the line Microwave Convection Oven that will look great installed in your 2004 Gulfstream Sun Voyager.

I was able to find the dimensions of your Dometic DOTRM15S which are 29 15/16" wide x 15 3/8" tall x 16 7/16" deep. The Furrion # FMCM15SS is 29-15/16" wide x 16-3/8" tall x 15" deep and will mount in the same location as they are the same width and the Furrion is only 1" taller.

I included a video of the Furrion # FMCM15SS and a picture of it installed in a customers RV for you to take a look at.

I was able to find the dimensions of your Dometic RM2862 which are 23-11/16" wide x 59-15/16" tall x 24" deep. Based on those measurements I recommend the Everchill RV Refrigerator w/ Freezer # 324-000119 which measures 23-1/2" wide x 59-1/2" tall x 24-3/4" deep as it is very close to the same size to fit your existing opening, offers 9.8 Cubic Feet of storage, and has reversible doors. The Everchill # 324-000119 uses 12v power to keep the fridge powered while driving to the camp site and keep it cold once you arrive. I included a video of the Everchill # 324-000119 for you to take a look at.
