Question:
I am trying to find the appropriate ball mount for my 2016 Chevy suburban trailer hitch 2 to attach to my boat 5000 lb on a trailer.

Finding the correct ball mount rise and drop takes some measuring from the ground to the inside top of the hitch receiver and then from the ground to the underside of the trailer coupler when the tongue is level. I've attached an article to assist.
If you want to have more adjustability or will possibly tow other trailers, then I recommend using an adjustable ball mount like the B&W Tow & Stow 2-Ball Mount - 2" Hitch - 5" Drop, 5-1/2" Rise - 10K - Black # BWTS10037B. This is a very popular option because it also has the ability to stow behind the shank when not in use to protect your shins. This provides a clean look and this product is made in the USA. I also recommend adding a locking pin like # 63232.
