Are there any cameras that can be mounted to a headache rack?

If your headache rack doesn't block the 3rd brake lamp, we have an option that would work great for you. Take a look at the # 3460008 from GCH Automotive. This system is intended for use on vehicles that don't have the factory reverse camera, and the monitor is included. If your truck has a factory rear view camera already, use the # 3460025 which would utilize your factory 4.2 inch factory monitor. Even if the headache rack blocks the 3rd brake lamp itself, the camera extends about 1-1/2 inches below the 3rd brake lamp which might very well provide you with good visibility for hitching up a gooseneck or 5th wheel.

If the headache rack blocks the 3rd brake lamp to the point where neither of these would be a viable option, I'd recommend the # RVS-83112 from Rear View Safety. The camera could be mounted to the headache rack or toolbox shown in your photo, and would work really well for you. The 3-1/2 inch monitor plugs right into the vehicle's 12-volt power outlet.
