It sounds like what you need is a pigtail to go from the tank to a regulator, then from the regulator you'll need a supply hose that's long enough to reach and connect to the to inlet valve (manifold) on your food truck and that has the correct fitting. Below are the parts I recommend:

1. MB Sturgis Propane Pigtail - Stainless Overbraid - Type 1 x 1/4" Male Inverted Flare - 1' # 100833-12
2. MB Sturgis Vertical 2-Stage Propane Regulator - 11" Water Column Outlet # 108220
3. MB Sturgis Propane Hose Assembly - 1/2" Female Flare Swivel x 3/8" MPT - 4' # 100383-48-MBS

Please note that the regulator has a maximum flow capacity: 400,000 Btu per hour, so you'll want to confirm this is within the specs for your water heater.

A 1/2 inch female flare fitting is most commonly used to connect a hose assembly to the main gas piping system. If your truck's propane piping system features a 3/8 male flare fitting, the hose assembly will need to have a 3/8 female flare fitting, like # 100040-48-MBS.

At the bottom of the page, I've linked you to a couple Propane Help Articles as well as our complete selection of supply hoses, in case you need a different length.
