According to our friends at Roadmaster, the Sterling All-Terrain Tow Bar is compatible with all Roadmaster base plate models, including the XL style # 1011-1 base plate used by your 2000 Suzuki Grand Vitara. In other words, they are indeed compatible.
You will also need to wire your Grand Vitara for towing. The easiest method would be to use the Roadmaster Bulb and Socket Kit, part # RM-155. The bulb and socket kit is very easy to install and will allow the lighting used for towing to remain independent of the wiring of the vehicle.
Many states and Canadian Provinces now require the use of a supplemental braking system like the Roadmaster Even Brake, part # RM-9400 which activates the vehicle brakes so that they work proportionally with the RV brakes ensuring safe and predictable braking.
According to my research, only Grand Vitara Models equipped with full-time 4WD with a transfer switch are capable of being flat towed safely. I recommend you confirm this by consulting your owners manual or Suzuki.
I will link you to some flat towing FAQ articles that you might find helpful.
