The owner's manual doesn't list a specific reason, it only states that failure to do so could damage the vehicle. The fact that the key needs to be left in the Accessory position while towing so the steering wheel doesn't lock up gives me a pretty good idea that with the key in the ACC position, there must still be an electrical draw on the battery. Disconnecting the battery prevents the battery from going dead while the vehicle's being flat towed.

The manual also mentioned that 2 wheel drive Colorado models can't be flat towed, only 4 wheel drive models are capable of being towed with all 4 wheels on the ground.

If your vehicle isn't a Diesel, you can use an auto disconnect, part # RM-766 that will prevent you from having to remove the battery terminal each time you tow. I've linked you to an install video showing the disconnect being installed on a 2018 Colorado. The procedure will be similar on your vehicle.
