Installing the EcoHitch Hidden Trailer Hitch Receiver part # 306-X7601 on a 2019 Subaru Outback Wagon does not affect the back up sensors. The backup sensors are at the ends of the bumper and not where the hitch installs. We installed the EcoHitch on a 2019 without any issues, I have attached the video for your reference.
If you plan on doing some towing you will need wiring. For that, I recommend T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector part # 118467. The Tekonsha brand wiring has proven to be a bit more reliable and longer lasting compared to the other brands. Since the vehicle has the backup sensors the vehicle wiring harness will be plugged into the back up sensor. If you follow that harness behind the trim in the rear cargo area the other side of the harness is hidden back there for you to plug into. I have attached an installation video on a 2019 Subaru Outback Wagon for your reference.
You may also consider the etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag. If you are not sure how much rise/drop you may need in a ball mount to tow your trailer level, I recommend to take a look at the helpful article I have attached about how to figure the amount of rise or drop you may need.
