I took a look at the owner's manual for your 2007 GMC Sierra 2500HD New Body and in order to determine towing capacity you not only need to know your engine and bed size but also your axle ratio, cab size, and if you have a 2WD or 4WD. If you take a look at your copy of the owner's manual with this information you will be able to determine your exact capacity, though from what I saw the capacity will be between 14,200 lbs and 15,700 lbs.

To tow a fifth wheel trailer with your short bed '07 Sierra 2500 New Body you will need base rails and a fifth wheel hitch. For this I recommend the Reese 5th Wheel Trailer Hitch w/ Square Tube Slider # RP30051 with the Reese Universal Base Rails and Installation Kit for 5th Wheel Trailer Hitches # RP30035.

This will give you a cost-effective but quality hitch and rail system that has a secure jaw system which has a smooth slider so you can more easily make tight turns. This hitch has a 16,000 lb capacity which is plenty for your 2007 Sierra. To add a 5th wheel wiring harness you will need the 5th Wheel 90-Degree Wiring Harness # 50-97-410 which is compatible with the factory 7-way on your truck.

I have added links to video reviews for you on these products which I recommend taking a look at.
