To change from hydraulic brakes to electric you need to swap out the brake assemblies, add trailer wiring for the brakes, add an electric breakaway kit, and then make sure your tow vehicle has a brake controller installed.
I'm not sure what the weight capacities of your axles are but that is how you will decide which brake assemblies to buy. For 3.5K I recommend the kit # AKEBRK-35-SA, for 5.2K I recommend the kit # AKEBRK-7-SA, and for 7K I recommend the kit # AKEBRK-7-SA. All of these are self-adjusting assemblies so you won't have to keep adjusting them when they wear down. If you happen to have a different weight capacity just let me know.
If you don't already have a 7-Way on your trailer then I recommend installing the junction box # HS381-9000 to help keep all of your wiring organized. Then to run brake wiring you just need to take 10 Gauge Wire # 10-1-1 (sold by the foot) and route it from the junction box to the brake assemblies.
A breakaway kit serves the same function as the breakaway pin on a hydraulic coupler so that in the event your trailer becomes uncoupled the trailer will apply the brakes. I recommend the Tekonsha Push-To-Test Trailer Breakaway Kit # 50-85-313 because it has a built-in charger and is compatible with up to triple axle trailers.
One of the best brake controllers on the market is the Redarc Tow-Pro Elite # RED44FR because it can be installed virtually anywhere, it doesn't take up much space, and it is very easy to use. If you let me know the year/make/model of your tow vehicle I can let you know what, if any, parts you need to install a controller like the Tow-Pro Elite.
In addition to all of this I have also attached a helpful article on adding electric brakes to a trailer that you can reference.
