For your 2018 Toyota Prius I recommend the Rhino-Rack System as it is the most popular option with aero bars for less wind noise. This rack will consist of the Rhino-Rack Vortex Aero Crossbars - Aluminum - Black - 49" Long # RRVA126B-2, the 2500 Series Legs # RRRLKVA, and Custom DK Fit Kit # DK467. If you will be using any accessories that fit in the integrated T-slot channels, then I also recommend the locking endcaps # RRVA-LEC4.
For the kayak carrier, I recommend the Rhino-Rack Nautic Roof Kayak Carrier w/ Tie-Downs - Side Loading - Clamp On # RR570. This carrier will give you a low profile system when not in use and will give you the support and security to safely transport your kayak. I've attached a video to assist.
