The item you referenced, Draw-Tite Trailer Hitch, part # 75751, will fit the 2012 Ford Escape models with factory 1-1/4 inch hitch. You will not need to remove the factory hitch to install the # 75751 hitch.
To complete your towing setup, you may need the following:
Ball Mount, part # D-4
2 Inch Hitch Ball, part # 19258
Pin and Clip, part # PC3
For wiring, if your Escape has backup sensors you will need to use T-One Vehicle Wiring Harness, part # 118551. If your Escape is equipped with a tow package, you will need to use Draw-Tite Custom Fit Vehicle Wiring, part # 118251.
I have linked a video installation of the Draw-Tite Trailer Hitch, part # 75693 on a 2009 Ford Escape as the installation should be the same. Also linked is an FAQ on trailer hitch installation tips.
