Based on images I have seen of the trailer hitch position on a 2018 Mercedes Sprinter 2500 you will be able to open the rear doors with the Ultra-Fab Dirt Bike Carrier # UF48-979033. As far as how much the carrier gets in the way after you opened the doors is hard to say. Depending on what you need to get in or out of the back it might just be easier to pull the rack out.
According to my calculations the highest part of the carrier is approximately 5 inches up from the top of the hitch receiver opening.
