My tire is about 2 inches wide. Will it fit in this bike rack? Also, how high does it stick up?

I went out to the warehouse and found that the Bike Rack Adapter # CC-125 that you referenced has an inside to inside measurement where your tire will sit is just under 2-1/2 inches.

From the ground to the top of the wheel mount measured about 11 inches.

In your case you're going to need to go with a bike rack that can accommodate fat tires as opposed to this carrier. You can go with the Swagman Dispatch # S44FR and use the Fat Bike Adapter Kit # S64694 for each bike with fat tires, or if you're needing to continue using a cargo basket as well then you'll want the Hollywood Racks Sport Rider SE2 # HR1450Z-FB instead.

The bikes were secured to the cargo carrier #CC-100 using the optional add-on adapter #CC-125 and the straps that come with it. These wheel loops bolt to the deck of the carrier. I have included a link to the video that shows how it works.
