I recommend the Curt Class III Trailer Hitch Receiver # 13028 for your 1979 Ford F-250. This hitch will fit either the standard bumper or the deep drop bumper. It will however, not fit if you have lower rear fascia or a rollpan or tube bumper. It is a bolt on installation but does require some drilling.
For trailer wiring you can use the Tekonsha Wiring Harness # 18252. This will add a 4-pole onto the back of your truck and includes quick-splice connectors to make it easier to hardwire.
If you need an adjustable ball mount the Convert-A-Ball Dual Cushioned Adjustble Ball Mount # CAB-UM will certainly help you level your trailer. Also, for a 2 inch hitch ball, # 40038 and for a 2-5/16 inch # C40008.
