For your 2005 Dodge Grand Caravan with Stow-N-Go, I'd recommend the Curt Trailer Hitch Receiver Class III - 2 Inch, # 13389. This hitch is much easier to install that other Class III hitch receivers on this particular vehicle and it has 350 lb Tongue Weight with a 3,500 lb towing capacity. This is a bolt-on hitch specifically designed for your vehicle with a sturdy, square-tube design.
If you will be towing with this hitch, I'd recommend the etrailer.com Ball Mount Kit for 2" Hitches # 989900. This kit comes with two different drawbars and two different balls to allow you to tow different trailers level. I've attached an article to help.
To complete your towing system, I recommend the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector, # 118300. This is a custom fit connector for your vehicle that simply plugs in behind the driver's-side and passenger's side tail lights. This will give you a 4-way flat trailer connector and complete your towing system.
