As long as your trailer equipped with a lunette ring is within the 5,000 lb weight limit of the MaxxTow # MT70034 and your lunette ring fits within the tangs of the clevis hitch (see attached photos) you can definitely use this with a lunette ring. There aren't any lunette rings that have a bolt pattern which measures 5" horizontally by 8" vertically so the best we can offer is a new lunette ring and mounting plate you would have to weld on. You can choose from either a 2-1/2" or 3" lunette ring, depending on what you need.

The B&W Pintle Hook Mounting Plate part # BWPMHD14005 that you referenced will slide into a 2" receiver tube opening on the tow vehicle. This will then accept a pintle hook so that you can tow a trailer with a lunette ring, not the other way around.
