We have really great suspension enhancement kits that do fit your 2000 Chevy K2500 but none of the air bag kits are a fit with the in-bed hitch you have since the brackets mount on the same part of the frame. What I would recommend instead is a RoadActive Suspension kit like the part # RAS3611-CHD for if you have factory overload springs or part # RAS3611-HD for if you do not have the overload springs.

The Pilot brake controller you have is a time delayed controller. If it only will put a small amount of braking power on the trailer when you use the pedal yet works fine with the override there is an internal problem since you said you have tried adjusting the gain knobs of the controller as well. The connector for installing a brake controller is located above where the driver's left knee would be, behind the under dash panel located below the steering wheel. If you lower that panel, it'll make finding the connector easier as it's pretty difficult to see from below. The connector is wrapped in black foam rubber and tape which should make it easier to locate.

To install a 7-way and brake controller in your 1971 Chevy C20 the first thing you need to install is a 4-way like the # 18252 which from there you'd convert to a 7-way since there isn't a direct fit 7-way harness for your truck.
