If the door thickness and cut out size matches what the Global Link RV Entry Door Locking Latch Kit with Keyed Alike Option # 295-000021 was designed for there's no need to try and match latch offset as that will match up as well. That's not a dimension that's needed thankfully when picking out RV latches since it's basically a standard dimension.

From the cutout hole to the edge of the door will need to be approximately 1-1/4" in order for the plunger of the Bauer Products Camper Door Lock # BA44FR to sit far enough out to catch the opening/strike plate in the door frame and hold the door closed. Are you just trying to separate the two pieces of the lock, part # 295-000019? It doesn't seem like it at first but they just pull apart. I'm not sure why it isn't demonstrated in the video but I just opened one in our warehouse.
