The important thing to consider is that any towing system is only as strong as its lowest rated component. According to my research, the 2004 Rendezvous is rated to tow 2000 pounds, 3500 pounds for the Ultra model. If the hitch with the 5000 pound capacity is indeed the correct one for your vehicle it can certainly be used, but the towing capacity of your Buick will be limited to the 2000 or 3500 lb manufacturer stated towing capacity.

I checked the online edition of the owner's manual for the 2018 Cadillac XTS and it does indeed state the maximum trailer weight is 1000-lbs, just as you mentioned, but is also notes that the tongue weight of the connected trailer should not exceed 10% of that maximum, which would then be 100-lbs. I sure the wiring harness is there and I get your frustration because even our installers have mentioned how difficult it is to find it. I went out to the warehouse and pulled a Recessed Trailer D-Ring Tie Down with Backing Plate and Hardware, # RR5K. The ring has an inner diameter of 1-1/4 inches and an outer diameter of 2.108 inches. The ring is approximately 0.427 inches thick.

While I certainly couldn't advocate enthusiastically launching your vehicle off every speed bump you come across, a shock load such as you describe was definitely taken into consideration during the engineering process for the Curt # C13292 Class III hitch. Reasonable driving wouldn't cause a problem.
