Yes, the Thule OutWay 3 bike rack # TH56BV (3 bikes) and # TH45JV (2 bikes) will fit your Volvo XC60.
The Outway 2 or 3 is the easiest to install and the most recommended rack.
If you don't have a bike adapter, I recommend the Thule bike adapter # TH982XT because it will make it much easier to carry alternative frame, children or women's bikes on a hanging bike rack.

I reached out to the manufacturer, Inno, who told me you needed 2 inches of depth behind the hitch pin hole of the hitch to use the tire hold, which is the following part number:

I would be happy to! The main difference between those two is that you can tow with the Hidden Hitch by Draw-Tite item # DT82GR. The Stealth Hitches Hidden Rack Receiver item # SH87FR is only capable of being used for accessories like a bike rack or cargo carrier.

I went and measured the hinge and mounting plate for the SportRack Replacement Hardware Kit # SR05587 and made a diagram for you to check out. As there were a few measurements listed on it, it seemed the better way to get them to you than typing them out. Pictures make it much more clear.

To install the Draw-Tite item # 76194 hitch on a 2024 Volvo XC60 you'll need to cut out a 2-1/2" x 3-1/2" rectangular section off your Volvo's fascia that faces the ground. It's just a thin piece of plastic that extends past your bumper underneath the SUV. Trimming this piece allows the 2" receiver and the safety chain loops to extend below the vehicle and bumper. The only way you will ever see the hole that needs to be cut out is if you lie underneath your Volvo and look up.

We have a converter # 118158 laying around so I measured it. The box measures 2-15/16 inches by 2-7/16 inches by 1 inch. You could use a small battery box such as # TK2051 to better protect the converter from the elements. The converter will generate some heat so the box you put it in will need to be larger than the converter and it will have to have some ventilation. The receiver included with the Stealth # SH87FR hitch for the 2019 Volvo XC60 isn't meant for towing, it's meant for hitch mounted accessories like bike racks or cargo carriers. In order to tow, you'll need the # SH87FRT hitch kit which includes the ball mount that's meant for towing which provides a 2 inch rise which will place the top of the trailer ball around 18 inches which wouldn't be sufficient to tow your trailer so it's level.
