According to Curt Manufacturing, their # C11438 Class I receiver will fit your V50 T-5 R Design.
All the hitch and bike rack manufacturers agree that bike racks used in a Class I receiver should be limited to carrying no more than two bikes. You'd have to measure the roof rack of your 2005 Volvo V50 to determine if the Thule roof rack part # TH859XT would fit or not. What you described is actually a safety feature of Class I hitches like the Curt part # C11438. They purposely install a weld stop in the hitch opening that prevents a Class II and up accessory fitting in the Class I hitch since Class I hitches are not as strong as Class II hitches. You most likely have a Class II hitch bike rack if you have had issues with it fitting hitches before.
You would need to upgrade your bike rack if you wanted to use it with this hitch.
