I checked the specs noted in the online owner's manual for the 2007 Cadillac Escalade and on page 378 it does indicate a maximum trailer weight of 8100-lbs for the Escalade AWD with 6.2L engine and 3.42 rear axle ratio.

For your 2016 Cadillac Escalade you will be good to use a 4 diode kit like the Roadmaster 4-Diode Universal Wiring Kit for Towed Vehicles # RM-152-98146-7. In order for the # C51180 Echo to function, you'll need to have all the lighting functions and the 12-volt power feed at the 7-way functional. Dual cam sway control can only be used on Reese weight distribution systems that have spring bars with curved ends for the cams to ride on. The Pro Series systems use spring bars with straight ends so you can't add a dual cam setup to them.
Best option would be to go with a new Straitline system that will allow you to use your current shank.

The particular Timbren Suspension kit you referenced, part # TGMFC1588H, is intended for a front axle application in the 2-wheel drive version of the 2000 Cadillac Escalade. It is normal for the Tekonsha Prodigy P3 # 90195 to be on even when your 2008 Cadillac Escalade is turned off, and it goes into sleep mode after 15 minutes of not sensing movement to preserve your battery.
The reason for it always being on is that's how it saves your preset settings, if it was turned off/unplugged each time the vehicle was turned off you would need to setup the controller each time.

On a 2019 Escalade, the plug you're looking for is in a junction box on the firewall to the left of the brake pedal. The junction box has a black cover, which will need to be removed and the # 3016 harness you'd looked at will plug into the socket shown in the provided photo.
