The 12' 3" x 8' measurement is for the fabric of the Thule HideAway Awning # TH64WJ. The cassette and end piece are each approximately 2-3" thick each. The only difference between the # TH64WJ, # TH490010, and # TH490008 is the fabric sizes.
The cassette is going to extend past the adapters and does only require 2 connections.

They rate the tongue weight on hitches based on how the vehicle would most likely be used. So the hitch you have that has a 500 lb tongue weight rating is designed to handle exactly 500 lbs when used in normal towing situations.

On the back of your Sprinter-based motorhome you can use a fixed (non-folding) 2-inch hitch-mounted carrier such as the Curt # C18145 but we do not recommend a folding type carrier since their folding/hinge mechanisms introduce a point of weakness.
