That is correct, solar panels systems are simply to recharge the battery and wouldn't directly power anything. They'll run directly to the battery bank. The Zamp inlet you have most likely is just a 2-pole SAE connector with a positive and negative wire ran directly to the battery for you plug in a portable solar panel system. For the wires coming from the brakes they do not matter as they connect to the magnets in the drum brakes which are not polarity specific. So one wire from each brake will connect to the frame/ground wire as a ground and the 2nd wire will connect to the positive wires coming from the 7-way.
The brown wires running through the axle are simply put there by the axle manufacturer so you do not have to run wiring down both sides of the frame.

With a Ford E-350 cab and chassis you should be able to use the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C55344 to get a 4-way connector for your lights. This wire harness plugs inline with the factory tail light wiring.
