The Draw-Tite Class III receiver you referred to, part # 75758 fits all Escape models, so it will work with your S model.
If you were planning on towing with your Escape S, you might also need the following:
Trailer wiring harness with 4-pole trailer connector, part # 118566
Ball mount, part # AMSC2
Trailer ball, # 19247 for 2 inch, or # 19260 for a 1-7/8 inch
Pin and clip, part # PC3
Locking hitch pin, part # e98882
