We do have video footage showing the Class II version of the hitch being installed on a 2015 Escape. The procedure for the Class II and the Class III is identical, so everything you see in the video would also apply to the Class III # 87641 hitch you're interested in.
If you'll be using the hitch for towing purposes, you might also need the following:
Trailer wiring harness, part # 118566
Ball mount, part # C45030
1-7/8 inch trailer ball, part # 19260 or 2 inch ball, part # 63845
Locking hitch pin, part # e98882
