Length of Wiring Harness on Pollak 5th Wheel/Gooseneck Wiring Harness # PK11893-11932
Question:
Is the Pollak PK11893-11932 long enough to mount at the front of the bed on my 2008 Ford F-250 with a 69inch bed?

Are you sure about that bed length? Ford only offered that short bed on the F150, not the F250.
The wiring harness would install inline with the US car connector behind the existing 7-way on your bumper. It would then need to work its way forward of the wheel well and up the bedside to the area you're wanting to install the in-bed 7-way. If you could run the harness in a straight line from point A to point B, it would work just fine but because you'll need to work around the spare tire as well as the exhaust system and the suspension, I believe the 7-1/2 foot length of the wiring harness would most likely not be sufficient. If you were installing the 7-way rearward of the wheel well, no worries.
Hopkins has a similar harness, part # 41157 that has a 10 foot long harness that would work much better for you. I've linked you to a video showing he # 41157 being installed on a 2010 F350, the procedure would be similar to your vehicle.
