When we installed the Draw-Tite # 76025 on a 2016 Honda Odyssey, we found that the hitch was recessed under the vehicle so that the distance from the hitch pin hole in the receiver to the rearmost point of the back bumper was 6 inches.

We haven't yet had the opportunity to install a hitch on a 2015 Odyssey, but since the 2016 model is identical to the 2015 model, I wouldn't expect the hitch pin hole to bumper dimension to change. If you were looking for a hitch mounted accessory like a bike rack or cargo carrier, you'd need to choose one whose hitch pin hole in the shank to the closest obstruction on the rack or carrier distance is greater than 6 inches.

For instance, the Thule Apex, part # TH9025XT you had looked at is indeed compatible, as you can see in the video I've linked for you.
