For a 30-foot trailer of 8000-lbs gross weight I suggest you opt for a Class V hitch like the Curt # C15572. This 2-inch receiver is rated for a substantial 1500-lbs tongue weight and 15,000-lbs gross trailer weight, providing a considerable safety margin. This hitch also is rated for use with weight distribution systems, which may be of interest to you in the future if you find you have issues with bad steering and braking performance due to a too-light front end on the Ram, or trailer sway from winds or passing vehicles.
This hitch bolts on without drilling or welding using included hardware. An installation video and two helpful articles are linked to help you with your install. The written instructions are linked as well.
I suggest etrailer Ball Mount Kit # EBMK2416 to go along with this hitch.
For a brake controller I suggest the Tekonsha P3 # 90195 that you reviewed, along with the harness # 3023-P. This popular controller is among the most reliable and easy-to-use units available. An install video is linked for you.
