In the video a reference is made to torquing down the mounting bolts. What setting should I use?

The Draw-Tite Class III Hitch # 75087 that you referenced installs using included hardware. Three different fasteners, each with their own torque specification, are supplied with the hitch. The install instructions, which are linked for you, indicate the torque required for each of the three fasteners. This information can be found under figure 3.
We leave the specific torque specs out of our videos just in case the manufacturer changes these between production runs.
