Your best bet here will be to purchase a longer shank to use with your Fastway e2 hitch. Assuming you are still using the shank that came with your e2 system, your shank should be 12" long overall, and 8" long from the center of the adjustment holes to the center of the shank pin hole. I recommend replacing your shank with the Curt Weight Distribution Shank # C17122. The shanks itself is rated for up to 15,000 lbs. This shank measures 18" long overall, and 14" long from the center of the adjustment holes to the center of the shank pin hole. So this would give you an additional 6" of clearance and should allow you to open your tailgate without disconnecting the trailer.
You are right that a hitch extension will cut your towing capacity in half. A longer shank will have no effect on your towing capacity.
