No, that one won't but I have one that will. It is the Draw-Tite Trailer Hitch item # 24687. This hitch is confirmed to fit the 1997 Ford Mustang GT with dual exhaust. This is a class I hitch with a 1-1/4" receiver. This is the highest capacity hitch available for your car.
I have attached a couple of pictures below of this hitch installed on a Mustang GT with dual exhaust. I have also linked an installation video to help you get it set up.
The Curt Hitch item # C11041 you were looking at only fits the V6 models.
If you are planning on towing you will also need a wiring harness item # C55326 and the Draw-Tite Drawbar item # 3593 and then for hitch balls item # 19258 for a 2 inch ball or item # 19256 for a 1-7/8 inch ball.
