I have a Furrion propane 21inch oven. Do you think it would be difficult to install the electric one in its place?

Whether or not an electric option like the Furrion RV Wall Oven with LED Knobs # FR74PR will be hard to install or not will depend on your particular RV set-up. If you already have electric available for the oven, then it would not be too difficult of an installation. If you do not have electric there and have to run the electric, then the installation could be more difficult.

We do have an electric stove top with the Greystone RV Induction Cooktop #324-000127 which is typically installed into a counter top, but we do not have an electric setup that would fit in place of a gas stove/oven.

You'd have to remove your old gas cooktop which would require turning off the gas supply for it but there's no reason you couldn't replace it with the Greystone Induction Cooktop for RVs #324-000127 that you referenced.
