The Ranch Hitch Universal 5th-Wheel-to-Gooseneck Coupler, part # AM3139 you referenced would be a fit for your 2004 Ford F350 Super Duty. This is a heavy duty coupler with a weight capacity of 24000 lbs and a tongue weight capacity of 6000 lbs, and has a remote coupler release and fits standard 2-5/16 inch gooseneck balls.
If clearance on tight turns is what you are hoping to accomplish, this adapter will give you a minimal amount of additional clearance on turns. It will not allow you to make a 90 degree turn. If you want to make sharper turns without hitting your truck cab, you may wish to consider a sliding fifth wheel hitch or a Sidewinder.
The main reason a sliding fifth wheel hitch and Sidewinders provide the necessary clearance for sharp turns is because they actually change the pivot point of the trailer when turning. The purpose of an offset gooseneck adapter is to provide more clearance between the underside of a fifth wheel trailer and the back of the truck bed.
If you do choose to use a sliding fifth wheel hitch or a Sidewinder, you will need to replace the gooseneck system you currently have installed.
