For your 2013 Dodge Ram Pickup with the factory 7-way plug installed, I would recommend the Hopkins Endurance 5th Wheel/Gooseneck 90-Degree Wiring Harness, part # 41157. This plugs into your existing OEM connector, which means no splicing, and also gives you another 7-way connector mounted in the bed of your truck, providing closer access for your fifth wheel wiring. You will need to cut a 2-1/8 inch hole in the bed of the truck to install the connector. I have linked you to an installation video for this harness.

The Pollak 5th Wheel / Gooseneck T-Connector with 7-Pole, part # PK11893-11932, you referenced is a fit for your vehicle as well, but does require wiring the pins, which is why I would go with the 41157. I have linked you to a product review video for this harness and also linked you to an installation video for this harness on a 2012 Dodge Ram.
