I recommend the SumoSprings Maxim Custom Helper Springs # SSR-106-47-1 for the rear of your 2019 Nexus Viper 29V on the Ford E-450 Cutaway chassis. You will need to ensure that you have the required 7" between the frame rails and the inside tire for these to fit properly. These springs have a 5,000lb capacity with the microcellular urethane that has a progressive spring rate to help absorb bumps as well as reduce body roll in turns. Do note that these will not increase your capacity and they only help assist the current suspension for a more level and stable ride.
For the front suspension the SumoSprings Solo Custom Helper Springs # SSF-106-47 have a 1,000lb capacity.
You can also upgrade your sway bars with the Roadmaster Front # RM-1139-176 and Rear # RM-1139-147 sway bars. These are designed for the additional weight that the RV manufacturers put onto the chassis and replace the factory bars. This will help with the body roll you feel in turns and from strong winds on the highway.
