The Fogatti RV Tankless Water Heater - Gas - Automatic Pilot - 41,800 Btu - White Item # LSB64FR requires the following to properly function:

8-13" WC gas pressure (11"WC pressure preferred).
14.5-116 PSI water pressure (40-45 PSI preferred).
12VDC electrical power.

First test your voltage using a meter like the LCD Digital Circuit Tester Item # PTW2992. If you're not receiving enough voltage you may be too far from the battery and need to increase the gauge of the wire. You should have 12AWG but may need to switch to 10AWG if your wire is travelling 60 feet.

Next you can install the Camco RV Water Pressure Regulator w/ Gauge - Brass Item # CAM40064 to keep the water pressure from 40 PSI to 50 PSI.

Then you can have a licensed technician check the gas pressure and adjust your regulator accordingly to get you where you need to be.

These are the only troubleshooting steps that you as the consumer can really take. Since you stated the gas and water pressures were good then the cause could be a bad thermostat on the unit or the thermostat (remote controller) thinking thinking the unit is warming the water correctly when it's not. I would check the electrical connection to ensure you have 12v at the unit. If all your pressures and power input are good then you'll want to reach out to the manufacturer, LaSalle Bristol as you have some other internal malfunction.
