For a hitch for your 2021 Jeep Cherokee Latitude, I recommend the etrailer Trailer Hitch Receiver - 2" # e73ZR . The etrailer hitch is compatible with your Latitude model and comes with all mounting hardware required for a bolt-on installation. It also has the benefit of being made in the U.S. As far as weight capacity, the hitch has a 675 pound maximum tongue weight and a 4,500 pound gross towing rating. In order to confirm whether your vehicle can accommodate this much weight, I recommend confirming your vehicle's weight capacity with you owner's manual. In addition to the hitch, you will need a ball mount and ball like what is included in the Curt Towing Starter Kit # C45534.
As far as wiring, if you need just brake lights/signal lights alone, you will only need the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # C56406. The T-One includes a ModuLite power converter to ensure that your vehicle's wiring matches that of your trailer. If you are looking to add a brake controller to the trailer, you will need the Universal Installation Kit for Trailer Brake Controller - 7-Way RV and 4-Way Flat # ETBC7 in addition to the T-One.
To add a brake controller, I recommend the Tekonsha Voyager # 39510 or the Curt Echo # C51180. Both of these controllers are proportional controllers which means that the controller activates the trailer brakes in proportion to your vehicle's braking action. The Voyager is more of a traditional-style controller than requires mounting into the dashboard of your vehicle near the steering wheel. On the other hand, the Curt Echo allows you to control the settings of your controller with the ease of your Smart device.
