What Hitch Bike Rack Do You Recommend for a 2021 Mercedes GLC?

I think I may have ordered the wrong hitch. I think I need to step up in quality to match the quality of the bike rack I intend on buying from you.

For a bike rack that fits your 2-inch trailer hitch on your 2021 Mercedes-Benz GLC, it really depends on if you have heavier bikes, bikes with fenders, and the number of bikes that you wish to transport.
If you have heavier bikes or bikes with fenders, I recommend the Hollywood Racks Sport Rider SE # HR200Z (2-bike version) and the # HR1400Z (4-bike version). the Sport Rider SE has a maximum per-bike weight capacity of 80 pounds, and the frame attachment style of the rack will allow you to bypass any potential for damaging bikes with fenders compared to a rack that uses a wheel-mount attachment style. Note that since the closest part of the # HR1400Z is 5 inches from the shank's pinhole, it might not clear your spare tire without a hitch extender like the Curt Hitch Extender # C45791. When using any kind of adapter, it automatically decreases the maximum weight capacity of the hitch by 50%.
If you have lighter bikes without fenders, I recommend the Thule Hitching Post Pro # TH934XTR. The Hitching Post Pro has a 35 pound per-bike weight capacity and will allow you to tilt the rack (with bikes unloaded) to gain better access to your 2021 Mercedes-Benz GLC's rear hatch. Another great thing about the Hitching Post Pro is that it has a long shank length: the distance from center of hitch pin hole to upright bar of the carrier is 13-1/2 inches. With this measurement, you will not have a problem clearing the rear bumper of your vehicle.
