Can you get a shank with more than the 3 inches that this lists?

You sure can!
The shank included with the Equal-i-zer Weight Distribution System w/ 4-Point Sway Control - 16,000 lbs GTW, 1,600 lbs TW # EQ64FR you were looking at only has up to 3" of drop so for more drop you can use one of the following shanks:
4" drop # EQ90-02-4800
6" drop # EQ90-02-4900
8" drop # EQ94FR
Each of these shanks still work in a 2-1/2" receiver, it just comes down to exactly how much drop you need.
