How Tall is the Curt Q20 For GMC/Chevy OEM Prep Package
Question:
Old truck: F250 XLT 4x4, bed height is 34inch short bed, current hitch is approx 16inch tall. New truck: 2021 GMC Sierra AT4 bed height is 40inch , 8foot bed. So you see my issue: 6inch difference. The recommended hitch from trailer is the Curt q20 C57FR. Will this work without modifying the Jayco 321 RSTS?

The Curt Q20 # C57FR can be adjusted as low as 13", so it's got a really small footprint and you're really only going to be adding about 3" of height but it might be enough to get your Jayco RSTS nose up. This is the shortest hitch on the market that fits in the OEM pucks on your 2021 GMC Sierra 3500.
I recommend measuring the distance from the plate of the pin box to the ground to determine what the difference is between the new truck and the Curt Q20 to see how much difference there is. It's possible that you may want to look at an over-under conversion kit, which is a simple solution that moves the springs from under your axle to on top of your axle and increases the height of the trailer by the height of the spring pack and the diameter of the axle.
For 2-3/8" axles you'd want the Dexter Trailer Springs Over-Under Conversion Kit # K71-384-00 and for 3" diameter axles you'd want to use the # K71-385-00. This solution is also going to help you make sure that you've got plenty of clearance from the truck bed rails in addition to keeping your trailer level, which will make it more stable during travel with less sway.
If you can let me know what measurements you've got from the hitch plate on your trailer king pin to the ground, I can let you know if you should look at an over-under kit to help with this issue.
